May is Here! At the Squirrel and Everywhere!




May is here! How it arrives with such speed and force is always a mystery. Of course, there is no other option but to jump in and go with it. Oliver is already begging for a swim in Tigger Lake. Although I think we might have a week until the ice goes out, buds are popping, birds are flitting all around, veggies and flowers are in full swing out at the farm, and we're sprucing things up around the Squirrel in preparation for summer. Our favorite part of this crazy transforming time of year is meeting new, happy, friendly faces: Squirrel summer employees, farm interns, and, of course so many customers! We hope to see you all at the Squirrel over this summer, here are a few reasons why...

Mother's Day Brunch!
Sunday, May 14, 11am-3pm
Treat a mom in your life to our annual luxurious and delicious full service brunch. The fixed price menu includes beautifully presented breakfast, lunch and brunch entrees, special kids' menu, decadent desserts, mimosas, flowers, yoga for moms with Kelly, and more! Reservations highly recommended, call 733-6887 to reserve a table.

Art Shows
Come by to see some fresh paintings by Jon Mann over the next month. No opening reception for this show, but we're always happy to have something colorful and thoughtful on the walls! In June and July, Karen Mannix and Paul Button will collaborate on a glass and wood show that is sure to be interesting and exciting! The opening reception will be Saturday, June 10 from 3-5pm. Beginning in October, there are plenty of slots for artists to do solo or group showings. Just contact Anita for more information.

 
Opportunities to Support our Family Farm  
Can't let spring go by without a plug for my family's farm efforts. Brian's CSA vegetable share program is underway for the 2017 season. To sign up for vegetable shares with pick ups next to the Squirrel from mid June into September, come by the Squirrel for a Share Registration Form, or print the form online! Also, the retail greenhouse out at Birch Creek Ranch will be open for about a month beginning May 18. This year, the farm will welcome retail customers Thursdays through Sundays. Check the signs out on the road to find out if they're open; we'll also post updates on Facebook. I for one can't wait for broccoli, snap peas, cherry tomatoes and fresh herbs!



Summer Staff
We are welcoming many new staff as usual during the month of May! Sierra, Kimmie and I are doing our best to pass on all of our Squirrel knowledge and hope you will be patient as all the new folks learn the ropes. Say hello to Haley, Jeff, Kate, Serandon, Rebecca, Sally, Viviane, Vicky, Erin and Eileen! During the Great Talkeetna Job Shuffle of 2017, we ended up without a full time cook. So if you or someone you know has decent knife skills, a friendly, reliable personality and likes making soups, quiches, sandwiches, chop veggies, roast meats, toss salads and work around a great bunch of delicious food freaks, contact Anita to apply! February Provides...Happenings at Flying Squirrel

Hello to all,It seems this February everyone is ready for a pick-me-up. The light is returning, there is lots of snow for playing outside, and we need to shake off our winter blues, stand up and DO something. Plenty to do in Talkeetna and at the Squirrel, we sure hope you'll swing by...

Second Saturday Art Opening
Saturday, February 11, 3-5pm

You still have a week or so to check out Jake Graupmann's photographs! On February 11 we welcome back local artist and musician Steve Durr for an exhibit of his new paintings. Durr's work will be on display until early April.

He Said. She Said. Valentine's Dinner
Tuesday, February 14, 6:30pm

Same ingredients. Two menus. Lots of laughter. Maybe we’re all a bit more alike than we thought. Or not. Join us for a delicious dinner, libations and some serious silliness. One seating, call for reservations 733-6887. $75 per couple includes 4 course dinner and some pretty silly entertainment. Anything for a bit of levity these days!


Sunday Extended Hours!
More light and more snow means more Sunday afternoon activity. We are extending hours and will now be open from 10am-5pm on Sundays. You will now have an extra hour to pick up your favorite Oatmeal Sandwich Loaf, a few fresh bagels, a donut muffin or come in for an après ski hot cocoa and ruggelach! The remaining hours will stay the same - Wednesday/Thursday: 8am-5pm and Friday/Saturday 8am-9pm.


Pat-on-the-Back
Someone once said "there's no such thing as bad press" but we'll sure take all the good press we can get! Edible Alaska did a nice write up about eating out in Talkeetna during the winter and featured Flying Squirrel and the attention we pay to locally sourced ingredients! And, if you haven't seen it already, check out this fabulous article in The Frontiersman which shows off some of our favorite things about the Squirrel - wood fired pizza, our family farm connection, great coffee, outstanding cheesecake and so much more. Bakery Delivery Program
We have 6 more deliveries planned for our winter season delivery program to Willow, Eagle River and Anchorage. You can give a wonderful gift of fresh baked goods to anyone you know who lives in these areas and we'll do all the work! More information, costs, options and sign up are all available here.


Summer Employment Opportunities
Here it comes! The wild and crazy ride that we love and dread is already almost here! We are accepting applications for friendly, team oriented, dependable employees who want to make, sell and eat Squirrel goodness. So that means bakers, cooks/prep cooks, front counter/baristas, servers and dishwashers. This year we are working on housing assistance for folks coming from out of state! Applications are available in person at our Mile 11 shop or by e-mail with a letter of interest to info@flyingsquirrelcafe.com.

November & December 2016

Wow. This is what I get for going on a two week family trip to the Southwest at the end of October.

It seems utterly impossible to keep up, especially when my main office computer decided to go "kaput", 60 people jumped on the Groupon offer in three days to join our bakery delivery program, Thanksgiving is upon us in a week, and brussel sprouts are coming out our ears! There is some kind of false impression that things slow down around here in the winter. And yet, I think it's also what keeps me going through the darkest time of year. It's all a grand coping mechanism: keeping things positive and moving forward in the world by being busy all the time. When that busy-ness is mostly about producing wonderful food and baked goods and coordinating it's successful connection with the people who consume it, I think it's all worthwhile! There are many opportunities for you to connect with Flying Squirrel's goodness before the end of the year....

Thanksgiving Orders
We are happy to offer homemade pies, cranberry sauce, dinner breads and croutons for stuffing to help with your Thanksgiving dinner fixins. Our desserts are delicious, unique and beautiful including Pumpkin Maple Cheesecake, Rustic Apple, Mocha Pecan and Pumpkin Rum Cake. Order by THIS Sunday, November 20 and pick up on Wednesday, November 23. We all have many things to be thankful for...



PTA Holiday Craft Bazaar and Silent Auction
Every year we make donations for various Talkeetna fundraisers. This is one of the best! Come by the Talkeetna Elementary School on Saturday, December 3 for holiday shopping (including our family's delicious assortment of canned goods and Squirrel stocking stuffers). We will also have a gift basket and gift certificate in the silent auction proceeds from which benefit 4th & 5th grade students (including my own son) going on a week long environmental education field trip to Kachemak Bay in April!

Taste of Talkeetna
Tickets go on sale this week for this annual fun event on Saturday, December 10 from 4-8pm. Flying Squirrel is one of seven restaurants participating this year. Get your tickets from the Talkeetna Chamber of Commerce, they usually sell out!

Bakery Delivery Program
Flying Squirrel fans that live in Anchorage, Eagle River and Willow are welcome to join our delivery program any time which brings a package of fresh baked bread or goodies to a convenient location in these communities every other Thursday from November through April. Lots more information is available at this link where you can sign up and pay as well as choose the delivery dates that work best for you.




Art Shows
This month's artwork by multimedia Cantwell artist Eleaca Young is colorful and uplifting. Come by to have a look or purchase a holiday gift for someone you love - or yourself. Her work will be on display until early December. Local photographer Jake Graupman will display his photos in December and January. The opening reception will be held Saturday, December 10 from 3-5pm.








Gingerbread House Workshops!
Design, build and decorate your very own gingerbread house. This two part class is open to families and groups of friends up to 4 people per house. On the first Sunday, December 13, 2-3:30pm, groups will choose a house design, roll out and bake all the pieces. On Sunday, December 20, 2-4pm, we'll supply icing and candy and instruction for decorating. Houses will be on display at Flying Squirrel during the week before Christmas. Preregistration is required. Hanukah Party
I'm feeling motivated to enjoy all kinds of celebrations this year and to celebrate diversity. It's a few days before the actual holiday starts, but we're going to hold an informal Hanukah Party on Thursday, December 22 at 4pm. Learn the story of perseverance and restoration, hear songs, and play the dreidel game. Traditional potato latkes will be available for purchase. All are welcome!

Autumn News - September 2016

Autumn?!? Really?!?! I hear that some lower 48 folks still have 100 degree temps! Early September definitely has that autumn feel here in Talkeetna though. Clear and crisp in the morning, some great Northern Lights and star gazing, yellow birch leaves dropping here and there, fireweed that just looks tired - kind of like everyone in Talkeetna! I like to say "the end is near", not because I'm a doomsday kind of person, but because when the travelers not longer come in droves, and school goes into full swing, we are really ready for the slower pace! I can't thank the fabulous Squirrel summer crew enough for all their hard work and dedication: Sierra, Rachel, Kaila, Angela, Kimmie, Isaiah, Raina, and Lily, as well as those that left us early for one reason or another: Bre, Haley, Jasmine and Michael.

But wait! The end of tourist season may be near, but the Squirrel goes on! We're open all winter and in addition to our regular tasty food, pastries, bread, coffee and pizza, we have many other fantastic reasons for you to walk in the doors coming up this fall!

Saturday, September 10
BUN-to-BUN! Still time to join this fun annual running race! Choose marathon or half marathon on trails, or 5K on the bike path, from Flying Squirrel into Talkeetna town. Our parking lot will be crazy for a few hours, so please, if you are participating, consider parking at NSI and take the shuttle to the Squirrel. This is an important fundraiser for the Talkeetna Elementary PTA, and this year it's supposed to be sunny! Register online or in person on the day of the event.

Textures, Layers & Colors, Oh My! Sonya Bitz, from Cantwell, will show her paintings at the Squirrel with an opening reception on Saturday, September 10 from 3-5. The paintings will be on display through early October. Then, October will bring an online auction/fundraiser for Northern Susitna Institute - stay tuned for more info!

We're pairing up with Specialty Imports again to present a limited seating autumn dinner and cider tasting! This event is likely to sell out, so call to reserve your table early. The fixed price dinner will include a gourmet 4 course menu featuring as many Alaska (and Talkeetna) Grown ingredients as we can muster. Each course will be paired with one or two hard ciders from California, Washington, Michigan and Great Britain with 7 different ciders to try. You might be surprised at the variety of flavors and the range of sweet-to-tartness! These intimate and creative dinners have been a big hit - we're excited to wine (or cider) and dine you at the Squirrel.


Winter Deliveries to Willow, Eagle River and Anchorage
As soon as we gear down from summer, it's time to gear up for winter! The bakery delivery program will likely be up and running again from November through April. For those who have participated before, you'll get more info by email soon. For Squirrel fans that just can't wait until the next trip up to Talkeetna, we hope you'll consider this great program - prepay for bread and/or pastry deliveries that are then brought every other week to a convenient location in Willow, Eagle River and Anchorage! Ask for more information by contacting us by email!

Happenings at the Squirrel and Lots of 'Em!


Hello friends and fans!

It's been awhile since I sent out an update. Not because there's nothing going on! Well, you know: business, family, life, sleep, paperwork... But so much happens in May, that I am just bursting like the spruce tips and birch buds to tell you all about it.

Speaking of spruce tips, we have a delicious Honey Cream Spruce Tip Ale from Kenai River Brewing Company on tap right now. And speaking of trees leafing out, right out our front door amid the spruce tips and birch buds in this picture, a little least weasel was hanging out a few days ago. Penny, our family dog chased it up the tree and sat for hours waiting for it to come down. If you see Penny and our new puppy, Ida visiting at the Squirrel, please DON'T FEED THEM - don't even give them dog treats! It's very important that our dogs learn not to beg from cars in the parking lot and we don't want them to get fat!


Mother's Day Brunch

Join us for another extravagant (yet kid friendly) full service brunch. Guaranteed, a mother in your life deserves it! Call the Squirrel this week to reserve a table. For $26, enjoy coffee, tea or juice, a fancy drink such as a special sparkling wine or wine spritzer, mocha, etc, choose from 5 special brunch entrees and 3 special desserts!
Mom's who get the brunch may also participate in a 10 minute mini yoga and relaxation session with former Squirrel employee extraordinaire, Kelly Thomas. Kids brunch menu available: $12 for children under 12. Advance reservation highly recommended, please call 733-6887!
 
Art Shows
Stacie Smiley's paintings are bright, thoughtful and unique; her show will be up at the Squirrel until May 12 and I can't recommend enough for everyone to come and have a look. Next, join long time Talkeetna resident, Rose Jenne on Saturday, May 14 from 3-5pm for the opening of her second (annual?) mosaic show. We will be unveiling an amazing table she created for the Squirrel, and her mosaics, whether whimsical or artistic are always a big hit. The show will be on display until June 9.

Toward a Living Wage

Higher wages mean higher prices. It's pretty much that simple. But I hope you will read on to learn more about my thoughts, research and changes at the Squirrel regarding this issue:

Many of you know that the biggest challenge in any small business is finding and keeping good employees. A seasonal tourist town with many summer opportunities makes those challenges more intense and dramatic. As well, minimum wage is on the rise all over the country including in Alaska where traditional waitstaff are also required to make minimum wage (unlike other states that have a special lower wage for waitstaff who make tips). Talkeetna's summer boom creates competition for employees with many local businesses even bringing in workers from Europe on J-1 visas.

Teachers (!), social workers, agricultural workers, and, yes, restaurant workers are considered the most underpaid professions in the U.S. In restaurants, reliance on tipping, for front of house folks produces difficult staff dynamics; discrimination and sexual harassment are widespread; tipping creates consistent inequity between front and back of house employees; and ultimately, tipping is unreliable, depending on varying levels of busy-ness and the random moods and whims of customers. Here's a recent article from the Washington Post: I dare you to read this and still feel good about tipping.

I hope people all over the US are thinking about the true costs of every purchase, from the sources of ingredients and materials, to the environmental cost of significant transportation of goods, to the hard work and love that goes into each thing you buy from a small business, to the incredible challenge small business owners and their employees have to find health insurance, pay for car repairs, or send a child to music lessons. Supporting small local businesses is key (not just during the holidays)!

Meanwhile, all of this is even trickier for a small volume, small town, bakery cafe. Here's the bottom line. I want the Squirrel to put out great food and great service, great atmosphere and great value. And, I want to come to work and have 3 (in winter) or 12 (in summer) happy, hard working, satisfied, motivated, friendly, enthusiastic employees. The number one factor in achieving all of those goals is being able to pay all of my employees a better wage. The living wage for a single adult in the Mat Su Borough is about $11 an hour. Really? Could YOU live on $11 an hour? For a single adult with a child, it's almost $24/hour! It is my sincere hope that this little bakery can work toward a living wage for all employees (including myself by the way).

So, here's the plan. All employees over 18 are now making $11 to $15 an hour depending on their duties, experience, longevity and level of responsibility. This is compared with $9 to $12 two years ago. I hope that timely raises from the boss (instead of tips from customers) will reflect excellent performance, attendance, efficiency AND customer service. In order to do this, many prices will be going up an average of about 20% over the next few weeks. And, you know, $12 an hour still isn't a lot of money, for a skilled barista or an apprentice baker, so we're not removing the tip jar, yet. We'll still leave it up to you. Except, when we roll out the red carpet for special, full service meals, an automatic hospitality charge of 18% will be added enabling fairly distributed reward for so much extra effort from every worker contributing to your enjoyment of a special meal. We will continue to offer our FOUR local "in-the-know" discounts: prepay credit, arriving by non-motorized means, bring your own to-go packaging or travel mug, and bread punch cards. Just ask at the counter to find out about these great ways to save at the Squirrel!

I would be happy to discuss these changes and my evolving philosophy and sincerely hope that any customers struggling with the changes will approach me! It's all a grand experiment and surely will continue to evolve, but I am ecstatic that the Squirrel can stand at the front of these changes that are happening all over the US, even in Alaska. We are excited for a bountiful summer with delicious artisan breads, delightful pastries, tasty beverages, creative wood fired pizzas and so much more. It all happens because you come in the door and because employees feel like they get what they deserve for their efforts. Sorry to be so lengthy - I have been thinking about all this for over a year and am happy to finally be sharing.

So, speaking of hard working, enthusiastic employees... Welcome, to a raft of new faces: Kaila and Kimmie (returning!), Bre, Haley, Angela, and Michael in May. Then Raina and Lily in June. And likely one or two more! Sierra, Rachel and myself are relieved and excited for all the extra hands. If you're a regular, feel free to give them all pointers for fun things to do while they're here, have a little extra patience as they learn the ropes, and help them remember your name!

Eight Days a Week
I lo-uh-uh-uh-ove you. Eight days a week, is not enough to show I care. OK. Enough Beatles. We WON'T be open eight days a week, even though that would be a great way to show some serious customer appreciation. But this year, I'm resolved and determined to bring delicious Squirrel food and woodsy, artsy atmosphere to residents and visitors every day from mid May to mid September!

October News 2015

Hello friends, fans and followers of everything at the Squirrel!











I can't believe how fast September went by. Do I say that every month? Every season? Every year? This September in particular went from full on warm busy days to quiet cold rain and snow in a blink. October is here and I haven't even spent a day catching up on paperwork yet (pictured above)! And, Brian and I have spent more than a day or two "off" putting up our favorite farm harvest products including green tomato salsa, sauerkraut, apple cider, and my new extra favorite, winter squash butter (also pictured above). Usually all the fun winter activities that bring you to the Squirrel are planned out by now. Here are a few, but there will be more to come once...well, once I spend a day doing paperwork...

Second Saturday Art Opening
Join photographer Fredrik Norrsell at the opening reception of his exhibit on Saturday, October 12, 3-5pm. The show, entitled Wild Alaska features photographs of wild places around our beautiful state and will be on display through early November. Meanwhile, WE NEED ART! There is only one other art show for our bright and empty walls and we're happy to talk to any Alaska artists and photographers about the possibilities - please pass on my contact information to artists you know!

Fun & Learning at the Squirrel!
Gluten Free Baking Class: Sunday, October 18, 1-4 pm. Most people who are trying to keep gluten out of their diet are already experimenting with gluten-free cooking and baking at home. This class will take a few steps beyond the basics of gluten-free baking, including discussion of special ingredients and techniques, as well as preparation of two of the hardest gluten free baked goods to make: cake and bread. Plenty of time will be allowed for questions, and participants will take two recipes home. Cost: $36. Register for the class on Alaska Folk School's website.

November Holiday Baking Class: Caramel! Sunday, November 15, 1-4pm. Caramel is a simple yet tricky confection. It can be utilized to add that sweet caramelized sugar taste as a topping for ice cream, or to add something special to classy desserts and confections. Learn tips and techniques for making perfect caramel plus find out how to add unique flavors that will impress everyone who gets an edible holiday gift! Help prepare a fancy chocolate tart with salted caramel, almond brittle with cardamom, and spicy caramel corn. Cost: $36. Register for the class on Alaska Folk School's website.

Halloween Creepy Treats - Ages 4-8: Wednesday, October 28, 2:30-4pm Kids always have a great time in the kitchen at the Squirrel making tasty, spooky and somewhat healthy Halloween snacks such as mummy pizza toast, jack o' lantern rice ball, monster mozzarella finger, cracker spider, spooky cat cookie and more. Children 5 and under must have a parent in the building. Preregistration and prepayment is required! Sign up early to reserve a spot in person at the Squirrel or call 733-nuts! Maximum class size, 12 children.

Trick Or Treat Pizza Night - Saturday, October 31, 4-9pm
Halloween is on a pizza night this year, so before or after trick or treating around Talkeetna town, be sure to stop by in costume to eat something solid, drink something hot, or just show off your costume! Gingerbread bats and chocolate coconut ghosts for actual trick or treaters PLUS PIZZA SHAPED LIKE PUMPKINS and other Halloween shenanigans.


Deliveries to Willow and Anchorage (and Eagle River?)
So, I'm working on it, REALLY! The concept for this year's CSB with bread, pastry and gluten free prepaid "shares" delivered to Willow and Anchorage is coming along with plans for a single subscription season from November through April. Deliveries will be made every other week, 10 total deliveries of Squirrel deliciousness just a little bit closer to your home than Talkeetna! The cost will be $10 per delivery for breads and $15 per delivery for pastry/gluten free. If you are interested in this program, please send your contact information and I will e-mail you with all the details when it's official. We would very much like to stop in Eagle River, but need a good location for that - any suggestions?

Thanksgiving Heads Up
I already have pumpkins on the brain! Brian's beautiful winter squashes and pumpkins from the farm are helping us gear up for creative and delicious Thanksgiving special order ideas! Autumn News September 2015

Well, goodbye busy summer, hello early autumn!

Hard to believe the busy Talkeetna summer tourist season is already winding down. As with everything this whole year of 2015, early seems to be the theme of each season. Many people I talk to seem ready - ready for starry nights, a little more relaxed pace, and opportunities for creativity and community.

At the same time, truth be told, however we analyze the numbers and the pros and cons of Talkeetna's winter customer base, it's incredibly hard to find the right balance that gets us from October until May without draining everything that's gained in the summer.

Please support this little bakery cafe business throughout the winter, bring your friends, send your guests! We promise, in exchange, to provide you with a warm and friendly atmosphere, tasty fresh bread and pastries, high quality thoughtfully produced espresso, coffee, tea, and juice, made from scratch soups, sandwiches, quiche and other breakfast and lunch items, plus our 2 wood fired pizza nights. NEW HOURS
First of all, we're OPEN LABOR DAY! After Labor Day, we will go right to our winter schedule with a few small changes this year. We'll still be open Wednesday through Sunday and although the hours will now be posted as 8am, we encourage early morning working folks to waltz right in the front door at 7:45 and get a coffee and muffin to go!

Our local children are all back in school and the Talkeetna Elementary School has awesome and exciting programs happening! Part of the success of our school is due to the PTA and parent involvement bringing healthy snacks, salad bar, art classes and many other important lifestyle activities to the school. Most people who are trying to keep gluten out of their diet are already experimenting with gluten-free cooking and baking at home. Take a few steps beyond the basics of gluten-free baking, including discussion of special ingredients and techniques, and preparation of two of the hardest gluten free baked goods to make: cake and bread.

Holiday Baking: Perfect Caramel

Learn tips and techniques for making perfect caramel, find out how to add unique flavors that will impress everyone, help prepare a fancy chocolate tart with salted caramel, almond brittle with cardamom, and spicy caramel corn - just in time for the holidays!

CSB - Bread & Pastries Delivered to Willow & Anchorage!
We're working on, once again, delivering prepaid "bakery shares" of bread and pastries to Willow and Anchorage. If you're on our CSB list, you'll be hearing from us very soon! If you're interested in getting Squirrel goodness a little closer to your Anchorage or Willow home, please contact us with your e-mail address so we can include you! The basic deal is: you pay in advance (about $10 per delivery for bread and/or $14 per delivery for sweets) and every other week, you pick up your bag of fresh baked goodies at the designated time and place. Except for coming to Talkeetna, it doesn't get much better than that!

Staff Changes
Staffing is the biggest challenge in every restaurant. This summer was really pretty smooth with MANY thanks to Ryan, Skye, Sierra, Kaila, Mike, Mark, Alice, Anna, Kimmie, Dylan (and a working visit from Esther). Most of them are moving on to winter travels, new jobs, school, and, well if you haven't heard already there's one baby on the way! Truly, it's hard to come up with words to thank the employees that make all this possible. Sierra, Mark, myself and Skye will be the faces at the Squirrel much of the winter plus one or two yet to be hired new folks. Positive changes are evolving to ensure that the folks choosing to work here because they love the food, want to learn, or like the pace, can also stay for awhile because it's a great place to be employed. Stop in if you want to invest your working hours with us!

ART!
Only one art opening is coming up this fall, when photographer Frederick Norssell will show his work beginning October 10. This provides a much needed opportunity to patch and paint our walls in September. But if you or someone you know would like to hang work this winter please contact Anita at the Squirrel! November and December are great months to show artwork, as Talkeetna hosts many visitors from around Alaska and holiday gifts are on everyone's minds!

Second Saturday Art Opening
Talkeetna folks that have been here awhile know Rose Jenne as the business owner of the old Three Rivers gas station, laundromat and convenience store. Retirement has enabled her to explore her creative side with beautiful and artistic mosaics. Join the artist on Saturday, May 9 from 3-5pm for the opening reception of her show entitled "Bits and Pieces". Rose's work will be on display through June 11. In June, young local Kaitlin McLure will hang paintings in her first solo show.

Mother's Day Brunch!
Treat yourself or one of the mother's in your life to a delicious and relaxing brunch at Flying Squirrel on Sunday, May 10 between 11am-3pm. Working on the brunch menu today, my mouth was watering - I'm the lucky one that gets to try everything!

As usual we'll feature Alaska Grown ingredients with entrees, desserts and fancy sparkling wine and fruit mimosas. Children's menu will be available and all mothers will receive the royal treatment they deserve and a special surprise. Reservations highly recommended, please call to reserve a table!

Talkeetna Baked, Talkeetna Grown: From Us to You...
Flying Squirrel tries to use as many Alaska and locally grown ingredients as possible. And, we want to spread the food love to you in any way we can! Anchorage and Willow folks can sign up any time for our prepaid bakery shares, delivered to 3 locations every other week.

Also, we hope Squirrel customers and fans will consider supporting our small Talkeetna family farm and partner Talkeetna Grown at Birch Creek Ranch! Prepaid vegetable shares (CSA) are available in 3 different sizes with weekly pick up next to Flying Squirrel starting in mid June, and farm produce is available at three different farm stand/market opportunities from July-September. Potatoes can be purchased over the counter at the Squirrel in 5 pound bags, usually into June! Hello everyone! Well, apparently spring has sprung in Talkeetna and beyond! Let's hope it's not an April Fool's joke, because this is about the earliest any of us have seen it. Our parking lot is gradually draining and at this rate will be cleared of snow, slush, ice and water three weeks earlier than usual. Time to start thinking about riding bikes to the Squirrel for a refreshing rhubarb ade!

Spring/Summer Bakery Shares

Anchorage and Willow Squirrel fans - this one's for you! Go to THIS LINK to find out more information or sign up for a prepaid bakery share, delivered every other week to the Willow Library or, in Anchorage: Open Space (E 64th) or Southcentral Foundation Wellness Center (Tudor Cir.).

Spring/Summer shares start next week and continue from April through July. Second Saturday Art Opening
Two worlds collide in April's art show with photography by two locals that didn't even know each other before this exhibit came about! Heather Leba will show her macro nature photography and Mark Westman will hang some spectacular Alaska alpine photography. Join the artists for the Second Saturday art opening on April 11 from 3-5pm. The show, entitled Little Worlds will be on display through early May. The month of May will bring Talkeetna's well-loved matriarch Rose Jenne who will fill our walls with her wonderful mosaics!

Earth Day Excellence - The Squirrel will reward your efforts for the planet!
The Squirrel tries hard to have a positive impact on customer well-being and the planet's health with thoughtful business decisions. Earth Day is a great time to remind ourselves that there is always more we can all do! Find out what the Squirrel is doing to make a difference at THIS LINK. Baking with Whole Grains Cooking Class
Sunday, April 26, 1-4pm - Explore whole grains in the kitchen at Flying Squirrel Bakery Cafe! Can whole wheat flour be used instead of white flour in a cookie recipe? Why does homemade whole wheat bread come out so dense? What can be done with left over cooked quinoa? Owner Anita Golton will discuss baking techniques that work whole grains into your diet. In this class, participants will help convert a pancake recipe to include left over cooked whole grains, taste test Flying Squirrel’s new whole grain Alaska Grown barley hot cereal, and prepare the Squirrel’s recipe for Molasses Multigrain bread. Summer Employment Opportunities
Skye, Nate, Mark, Kimmie and I will be joined in the kitchen and at the counter by some new, friendly and hard working folks over the next month. As we start transitioning to the busy summer season, please welcome (and have extra patience with) Sierra, Dylan, Ryan, Kaila, Steph and Mike. Though I can't imagine all these people working in the Squirrel's kitchen at the same time, there is room for a few more! We are still looking for someone to join the baking crew, ideally with 1-2 years experience as well as two part time barista/counter helper/dishwasher positions. March is Marching In! News from the Squirrel March 2015

 Hello all!
I know I say this every year. But I do love the month of March. My sweet little boy ain't so little any more and turns 9 on the "Ides" (he's 5 in the photo!). That's only reason number one. There are many other reasons, like more day length, great skiing (even despite the lack of significant snow), spring break, the Oosik Classic Ski Race, the Trio Fat Tire Bike Race, some artists coming out of winter hibernation, and Denali Brewing Company's homebrew weekend. Almost seems like we try to pack in all of our fun before summer hits! While you're out enjoying the sunshine, we hope you'll stop in at the Squirrel...

Second Saturday Art Opening - Three Man Show
Jon Mann, Chris Bowman and Bill Barstow will surely dazzle us with recent paintings, pastels, sketches and other recent artistic endeavors. It's always a pleasure to see what they come up with and take the opportunity to appreciate some fine art! Come by for the opening, Saturday, March 14, 3-5pm. Their exhibit will be on display through early April. 
Oosik Classic Ski Race - March 21
What can I say? Maybe we'll still get more snow, but even if we don't, all 750 ski racers are sure to have a blast! Rumor has it that the race start will be taking place right next door at the Mile 11 DOT gravel pit again. Whether you plan to sign up and ski, or come to watch, stop over at the Squirrel before or after and we'll be ready with many smiling staff members, breakfast wraps, soups, sandwiches, cookies, loaves of bread to take home on Sunday, plus awesome coffee! This year we'll try to have an extra porta-potty on hand, and we're aiming to keep the parking lot a little more organized. We're also donating cookies for the Junior Oosik which happens in the morning!

December News 2014

Hello everyone!
Well, no doubt about it now. Winter is here. And the month of December keeps us all busy - hopefully with family and friends, joyful and giving thoughts and actions, tuning up our skis, sleds and skates, planning vacation details or cozying up by a fire with a book. As usual, things are hoppin' all over Talkeetna, including at the Squirrel! Stop by and visit...

Art Challenge - SNOWFLAKES!
We have arrived at a bit of a lull in artist demand for wall space! If you or someone you know is interested in showing artwork at Flying Squirrel please contact Anita. Meanwhile, in lieu of a December show, we've decided to do a SNOW DANCE to encourage a little more white stuff to come down from the sky and brighten our winter days. So, we're sponsoring a simple snowflake-art group show. Any time during December beginning this week, bring in your snowflake themed art, photography, mixed media or cut paper to display for the month and into January. All ages are welcome to participate. We will have a box of supplies on hand throughout the month for you, your family and friends to make paper snowflakes here with fun paper and scissors and we'll hang them right up on our walls! Well, maybe not ALL of them. A People's Choice prize of a new Flying Squirrel t-shirt will be awarded for the best cut paper snow flake chosen by customers!

Holiday Craft Bazaar
Saturday, December 6 from 11am-5pm
Come by the Talkeetna Elementary School to peruse the locally made gifts and inspirations for the holidays. We'll have a booth in combination with Talkeetna Grown with great stocking stuffers including dog treats, granola, kale chips, barley crackers, home grown pickles, jam, dried herbs and more. Consumables made by a small local business really make your holiday spending go a long way and the event helps support the great work of the Talkeetna Elementary School PTA!

Gingerbread House Workshop
Wednesday, December 10, 3:00-4:00pm
Sunday, December 14, 2:00-4:00pm

Every year parents and children work together to make fanciful gingerbread houses they create here at Flying Squirrel. The Wednesday workshop day includes design, rolling, cutting, baking and planning. On the Sunday workshop day, families will build and decorate their houses. Space is limited so sign up early! $40 per house (4 participants max with at least 1 adult). Prepayment and preregistration is required.

Taste of Talkeetna
Saturday, December 13, 4-8pm
Take a tour of Talkeetna restaurants! When you present your ticket, you’ll have the opportunity to eat (or drink) at seven participating local establishments including Flying Squirrel. The small, delicious portions of food or drink always add up to more than a whole meal. Advance purchase only. Limited number of tickets on sale until December 12! Tickets are available at Flying Squirrel and other restaurants for $30 per person or by calling Beth (for will call or credit card purchases) at 808.333.7779.

Holiday Orders
Yup. Christmas is coming. We'll do it up as usual with mini cookies and cookie visiting plates starting next week! We're printing up lots of gift certificates, stocking up on K-Bay coffee beans and we still have my sister Esther's beautiful CDs of music if you need a gift for someone you love! Plus look for another e-mail mid-month with special order goodies for the holidays. Egg Nog cheesecake anyone? Also, new this year will be a beautiful and delicious poppy seed epi bread wreath (pictured).

Our new delivery program (CSB) to Anchorage & Willow has begun, but it's not too late to join! Go to the website for lots more information and to sign up for bread, pastries or a gluten free package every other Thursday. Prices are now prorated for missed weeks and we're over half way to our goal for numbers. We got wonderful praise from the first pick up including two hand written notes, several e-mails and... from Carol, "The multigrain loaf of bread in our bag was especially good. Hope the first week of deliveries went well and that others enjoyed their bakery items as much as we did! Very tasty!"

November 2014 News

Hello Everyone!
It's November. Alaska's strange month that isn't sure if it's autumn or winter. Ice skating and 6 degree mornings sure seem like winter. But the lack of snow and 35 degree afternoons make you wonder. Either way, most days seem just right for enjoying a bowl of soup or a hot cup of coffee! We hope you'll stop by - the foot trail behind the Squirrel makes a perfect short walk to Tigger Lake and back for hot chocolate and a treat! Meanwhile, there are so many exciting things about November...

Exciting News for Anchorage and Willow Squirrel Fans!
Subscription bread and pastry shares (including a GF option) are NOW AVAILABLE with 9 bi-weekly winter deliveries starting November 20! Information about how this will work, delivery dates, online payment and registration form for the inaugural Flying Squirrel CSB can be found here or in person at the Squirrel. We are happy to partner with Open Space in mid-town Anchorage as our first drop off location and are working on delivery locations in Willow and Eagle River. Visit Our Booth! at the Alaska Food Policy Council Food Festival & Conference, Saturday, November 8, 9am-5pm, at Lucy Cudy Hall, UAA. The Food Festival will feature Alaska food vendors providing free samples of their products, a farmers’ market, live music, free workshops and more. Flying Squirrel and our family farm Talkeetna Grown at Birch Creek Ranch will have a table at the farmer's market including Flying Squirrel breads, and other Alaska Grown specialties like granola, barley crackers, kale chips, plus Talkeetna Grown pickles, salsa and fresh cabbages, kale and potatoes.

Well known local painter Tommy Robinson has come out of the wood work to show some new paintings at Flying Squirrel during November! The opening reception will be held Saturday, November 8 from 3-5pm. Rumor has it he's been working on something new and different...florals in oil? You'll just have to come by and see! Cooking Class for Adults: Sweet & Decorative Breads
Sunday, November 16, 1-4pm
- Come to the Flying Squirrel Bakery Café where we will practice techniques for making sweet, enriched yeasted doughs to make breads such as challah, brioche, babka, danish filled pastry, and breakfast buns. Students will help prepare pumpkin pecan sticky buns, cranberry lemon ricotta danish, and challah dinner rolls – just in time for Thanksgiving! To register for this class please contact Alaska Folk School at 733-7111 or register online.

Thanksgiving is Just Around the Corner!
Watch for a mid-month e-mail with our Thanksgiving special order offerings including my mother's most delicious cranberry sauce, several varieties of pie and cheesecake as well as fresh dinner rolls. The order deadline will be November 23 with pick up on November 26. We have unseasoned croutons available now for your whole grain stuffing and often we run out before Thanksgiving, so you might want to pick up a bag or two next time you stop in. Finally, we will order fresh free range turkeys through New Sagaya again this year - ORDER DEADLINE OF NOVEMBER 15!
